Pest Control for Restaurants & Food Businesses in Ireland
By Wicklow Pest Control
If you run a restaurant, cafe, takeaway, hotel kitchen, bakery, or any other food business in Ireland, pest control is not a discretionary expense. It is a legal requirement. European food hygiene law - implemented in Ireland through S.I. 369/2006 - requires food businesses to implement pest management as part of their HACCP prerequisite programme, and to maintain documentation that demonstrates compliance.
This means that when an Environmental Health Officer (EHO) walks into your business, they will ask to see your pest control records. The wrong answer - 'we call someone if we see something' - will not satisfy the inspection.
This guide explains what the law requires, what pests food businesses most commonly encounter, and what to look for when choosing a pest control company.
What the Law Requires for Food Businesses in Ireland
EC Regulation 852/2004 on the hygiene of foodstuffs requires all food business operators to put in place, implement, and maintain a permanent procedure or procedures based on HACCP principles. Pest management is a prerequisite programme (PRP) under HACCP - a foundational control that must be in place before the main HACCP system applies.
In practical terms, this means:
- 1You must have a contract with a professional pest control company - not an occasional one-off call-out arrangement.
- 2You must have a site survey carried out and a written pest management programme in place.
- 3Monitoring stations (rodent bait stations, insect monitors) must be installed, numbered, and recorded on a site plan.
- 4Regular technician visits must be carried out and documented - with signed records of what was found and what was done.
- 5Product Safety Data Sheets for all pesticides used on your premises must be kept on file.
- 6Your pest control contractor's technicians must hold recognised professional certification (such as PMU certification).
Common Pests in Irish Food Businesses
Rodents: Rats and Mice
Rats and mice are the most serious pest risk for food businesses. They contaminate food and surfaces with urine and droppings, gnaw packaging and structural elements, and transmit diseases including Salmonella and Leptospirosis (Weil's disease in the case of rats). Mice can enter through gaps as small as 6mm - around pipes, under doors, and through gaps in skirting boards. Rats require a gap of approximately 12-20mm.
In food businesses, rodents are most commonly found in dry goods storage, under equipment, in bin stores, and around delivery areas. A Professional Pest Control programme monitors these areas continuously and responds immediately to any evidence of activity.
Cockroaches
German cockroaches (Blattella germanica) are the most common cockroach species found in Irish food businesses - kitchens, warm motor areas behind fridges and under dishwashers, and service voids. They are nocturnal and an infestation may be well established before a business owner sees a live insect. Signs include droppings (resembling coffee grounds), egg cases (oothecae), and cast skins. Cockroaches spread pathogens including Salmonella and E. coli on food contact surfaces.
Flies
Blowflies, houseflies, and fruit flies are significant food contamination risks. Flies land on waste and faecal matter and then land on food and food contact surfaces - transferring pathogens mechanically. Flying insect control in food businesses combines UV insectocut or glue-board traps, fly screens on openings, waste management, and drain management (drain flies breed in organic matter in floor drains).
Stored Product Insects
Food manufacturers, bakeries, and grocery operations are vulnerable to stored product insects - grain weevils, flour moths (Indian meal moth, Mediterranean flour moth), biscuit beetles, and saw-toothed grain beetles. These insects contaminate dry goods and can spread through a facility rapidly. Pheromone monitoring traps detect early activity before an infestation establishes.
What Happens During an EHO Inspection?
Environmental Health Officers carry out unannounced food safety inspections of food businesses. During a pest control assessment, they will typically:
- 1Ask to see your pest control contractor documentation - contract, site survey, monitoring records.
- 2Check that the contractor holds current certification (PMU or equivalent).
- 3Physically inspect the premises for evidence of pest activity - droppings, gnaw marks, live or dead pests, egg cases.
- 4Check monitoring station locations match the site plan.
- 5Review the most recent treatment records - what was found, what was done, what products were used.
- 6Assess structural conditions - proofing, waste management, harbouring conditions.
The most common pest control failure at EHO inspections
The single most common pest control failing found by EHOs in food businesses is not a live infestation - it is missing documentation. A business may have had pest control carried out but cannot produce the records. Wicklow Pest Control provides a complete documentation file as standard for every commercial client.
Choosing a Pest Control Company for Your Food Business
When selecting a pest control contractor for a food business in Ireland, confirm:
- PMU certification: technicians should hold current Pest Management Units certification, or equivalent recognised qualification.
- HACCP-compliant documentation: the company provides a full pest control file including site plan, signed visit records, product SDS sheets, and corrective action records.
- 24-hour emergency call-out: for food businesses, a pest problem cannot wait. Confirm that emergency call-out is included in the contract.
- Integrated Pest Management approach: a quality contractor uses IPM - minimising pesticide use through prevention, monitoring, and targeted treatment - rather than blanket chemical application.
- Local presence: a local contractor with knowledge of your area and sector can respond faster and has relevant experience with seasonal pest pressures specific to Ireland.
